Bluefin
I loved the bluefin (tiny cube) piece the most. Chef quoted $86/lb and I think it was worth it. Beautiful flavour and well integrated texture/fat. The chu-toro was a bit too sinuous for me and was hard to bite and separate. It was nice to have a side-by-side comparison of the different cuts.
